Produced in relatively small amount, the wine-making process involves pressing the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri (Amphora-like vessel that is buried in the ground). Fermentation process is done inside the Qvevri. After malolactic fermentation is done, the wine goes through the process of aging 4 to 6 months once again in Qvevries. Fermentation with skin rachis and seeds gives wine straw color.
